ISO: Scalloped Salmon - Speaking of canned salmon...
Misc.My mother used to make a casserole dish called Scalloped Salmon or Escalloped Salmon. It was canned salmon in a VERY thick (almost gloppy) but very tasty white sauce, no noodles and baked of course. I also recall that there is some type of crumbled crackers in this dish; I do not recall if they are saltines, Ritz, etc. but this hint may help in my search. I have many of the recipes still from her recipe box but not this favorite of mine. If anyone has something similar I would appreciate a post; it is a wonderful comfort food if someone is under the weather.
