ISO: Several food stations for 60 plus people

Hello, We are having a ladies function at church and are having 4 food/ drink stations and am figuring on 60 people. Can you help with the quantity needed for each. We are serving the following:
Potato bar w/butter, sour cream, bacon bits, chives, and shredded cheese.

Soup station: Taco soup (have this figured out) and Chicken & rice soup (this one is figured out, too), mini corn bread, shredded cheese and tortilla chips.

Salad/Fruit & veggie station:
Mixed salad, shredded cheese, bacon bits, croutons, salad dressing, garbanonzo beans, nuts,
cucumbers, carrots, tomatoes, celery, purple onion, raddishes, grapes, strawberries, pineapple and maybe another fruit.

Dessert station:
Make your own Sundae bar-chocolate and vanilla ice cream, water-based sherbert, brownies, nuts, whip cream, chocolate and caramel syrup, various toppings

Drink station:
coffee, punch and water
