ISO: Tippy's Tacos (Toucan Taco) Queso

I worked at Tippy's from 1982-1983 in the kitchen. Part of my job was shredding the cheese for the Queso. I can tell you that at no time did we ever use Velveeta or American cheese. We shredded 5lb blocks of high quality cheddar along with the tomatoes and other ingredients. I have yet to duplicate the taste...been close but not the same.
