ISO: wedding reception dinner for 70

I am catering my son's wedding dinner for about 70 people in October.
I have catered several weddings before and there was no problem since I was in charge of the kitchen. This time however I want to enjoy the evening with my son and his wife instead of working the entire night. The problem is that everyone I could normally count on to help is on the dinner guest list. This is what I have so far: tray served hors d'oeuvres. A plated first course salad, and a buffet for the rest of dinner: stuffed chicken breast entree, roast potatoes, glazed carrots (my sons fav) and another side (not quite sure what).
Here is what I am asking: Any suggestions for make ahead and freeze hors d'oeuvres, what is an easy salad to plate?
Any suggestions on the menu would be appreciated too. What about an easy but elegant dessert? All of this on a fairly tight budget. Help!
