ISO: What is the secret to keep batter on Chilies Rellenos?

What is the 'secret' to keeping the batter on Chilies Rellenos? Mine went a slippin' and a sliden off the peppers before and during frying. I used fresh Pablanos that I had charred and removed the skins.
