Recipe: Potato Loaf (using cooked cubed potatoes)

POTATO LOAF

8 cooked potatoes, cubed
4 green onion and tops, chopped
1 (2 oz) jar pimento, chopped
1/4 cup butter or margarine
1/4 cup flour
1 1/2 tsp salt
1 1/2 cup milk
2 cups shredded sharp cheese

Place potatoes in loaf pan; add onions and pimento; set aside.

Melt butter in a small saucepan. Add flour and salt and whisk together until smooth. Slowly whisk in milk and simmer, while stirring, until sauce is thick. Remove from heat. Pour white sauce over potato mixture; chill overnight.

Bake at 350 degrees for 35 minutes.

Cover with cheese; bake 10 minutes longer.
