Thank You: Fighting against bread mold

Yes good thought but the freezer is kept filled with good foods from our garden. Not much room for bread. So it would help if we can add a small amount of gentle preservative to the dough that will retard the formation of bread mold. Someone suggested that baking soda is a natural preservative, but this also makes for more rise in a dough. I don't know yet how that may effect the bread textures. So I am still trying to learn what bakeries add to bread to preserve it and retard the growth of mold.
