re: bread gets moldy

Both King Arthur Flour Company and the Bread Machine Magic Book of Helpful Hints say to add a bit of Lecithin (either granular or liquid) to your breads to make them keep longer. Neither one said how much longer it would keep.
About 1/4 teaspoon per cup of flour.
