Thank You: Shirley/TX re: Chimichangas

This is the BEST chimichanga recipe I have come across yet! It seems to be almost exactly like I used to get in Long Beach!

However, they would top it with shredded cheese after deep frying it and pop it into a hot oven to melt the cheese. It was served on a bed of shredded lettuce and topped with salsa. Also on the dish would be quacamole and sour cream.

I could never get enough of these! Now I can make them up ahead of time and freeze before frying. Then I can have them whenever I want. Thanks for the recipe.
