Hi Randi, I really enjoyed reading your post. Believe it or not I have never used Parchment paper. I am fairly new to the inernet and this site and noticed it mentioned a few times. My Mom is Italian (Sicilian) and she and her 5 sisters are excellent cooks and especially my one aunt for her pastry and pies. I have never heard them refer or see them use Parchment. I just returned from New Jersey, my home until 2 yrs ago when we moved to Ga. I should have looked for it in NJ. I probably will have a hard time finding it here in the mountains, but I will check this week. Do you use this when baking cookies ? Do not laugh, but I bake many of my cakes in the large tube pan and I line with Wax Paper and the cake has never stuck to the pan. I also use the wax paper for layer cakes. I am sure this is probably a "no no" for you trained bakers! My daughter is now dating a wonderful Italian boy from NJ who's entire family is in the restaurant,deli and bakery business. He is now attending Culinery school and we have some wonderful conversations re cooking. I will check with him to see what they teach him regarding the Parchment paper. Once again thank you for all your information and recipe.
