Thanks so much for the info. I will try the first approach,then,if they are better. The cherry pitter you talk of it like the one I saw, made of plastic. Will go get one. As for the county extension, I work as a volunteer Master Food Advisor there. I keep learning all the time. No one has asked about maraschino cherries since I have been working there. I am assuming the lime would be the same, but I can ask the pharmacist. I have never canned cherries because they are not something my husband would eat, but I am trying some new things each year.
