Hi,

With respect to the lime water I really don't know how to answer that question. I was surprised to see the note on the bottle about it's use. It may be the same type of lime. I don't know what proportions you would use to create the lime water. You may be able to call your local cooperative extension office and ask them or better yet call a pharmacist. I'm sorry I'm not more helpful re the lime water.

I have made both versions. I prefer the first method. They are closer to the commercially produced cherries in texture....firmer than method 2. I didn't have to worry about any residual salt. They didn't require so much rinsing.

Rainer and Queen Anne Cherries are delicate in nature. They bruise easily and tend to fall apart easily when cooked.
