FRESH BLACKBERRY CUSTARD PIE
1 (9 inch) pie crust
FOR THE BERRIES:
2 cups fresh berries
1 1/2 cups sugar
1/4 cup flour
FOR THE CUSTARD:
2 eggs, beaten
1 small can evaporated milk (2/3 cup)
1/2 tsp. vanilla
FOR THE CRUMB TOPPING:
1/2 cup sugar
1/3 cup flour
1/4 cup margarine
1/2 tsp. vanilla
Combine berries, 1 1/2 cups sugar and flour and toss to coat fruit. Fill a pastry lined 9 inch pie plate.
Mix beaten eggs, milk and vanilla and pour over fruit.
Mix topping ingredients together until it resembles coarse crumbs. Sprinkle crumb mixture over berry filling.
Bake at 350 degrees F about 1 hour or until done.
FINNISH BERRY PIE
FOR THE CRUST:
1 1/2 cups margarine, softened
3/4 cup sugar
2 eggs, beaten
2 2/3 cups flour
1 tsp. baking powder
FOR THE FILLING:
1 (16 oz) container sour cream
1/3 cup sugar*
2 eggs
1 tsp. vanilla
24 oz. frozen berries
TO MAKE THE CRUST:
Cream margarine and 3/4 cup sugar together. Add eggs, mixing well. Add flour and baking powder. Spread 1/2 inch thick in 9x13 inch baking pan, forming ridge around outside.
TO MAKE THE FILLING:
Cream together sour cream, eggs, sugar and vanilla.
Layer berries on top of crust. Pour prepared filling over berries.
Bake at 400 degrees F for 20- 35 minutes.
*Adjust sugar according to berries' sweetness.
