You can put the cocoa in the fudge before cooking it if you wanted to. Also can add a half cup or more of peanut butter, any kind, at the end before pouring into a pan.
I use brown sugar as much as white in my cooking. Try in cornbread, cakes, cookies, tomato dishes, sauces, barbecues, marinades, chilies, veggies or whatever calls for white sugar. I honestly like the flavor better. I make my own breads and always use brown sugar in my white bread. texture of baked items is more delicate made with brown sugar.
