Lets see now, Australia is having Spring so things are warming up. I don't know how warm it will be where you are camping. If it's still nippy how about a good hearty soup that you make at home with some crusty rolls or bread. You could make a pie, cake, or cookies for dessert. When I make soup for camping I put it in a cardboard 1/2 gallon milk carton (don't know if you have those there) which we just throw in the fire after dinner. Now if it's warm how about a good chicken, tuna, or potato salad made at home and they travel well.

For your other meals there is always steak, hamburgers, hotdogs cooked over the grill. You can also put corn and potatoes on the grill.

Here's a neat way to fix potatoes.

POTATOES IN A POUCH

1 small to med potato (scrubbed-you can scrub them at home)
1/2 teas margarine
1 slice processed cheese
paprika

Slice or dice potatoes and put onto a piece of aluminum foil (10 X12). Dot with margerine and lay cheese slice on top and sprinkle with paprika or salt and pepper. Place the potatoes in a single layer and fold foil up to make a double seam down the middle of the packet. Fold ends up double. Roast on the coals turning frequently with tongs, for about 45 minutes. Make one pouch for each person there. You can also do corn on the cob the same way. Butter and salt and pepper the corn, wrap in foil, and place on coals turning frequently for about 20 minutes.

Do you have a heavy cast iron dutch oven? If so there are many things you can make in those. We have a friend whe always makes "Black pot Stew" in one. I'll give you that recipe in the next message
