Here is our friends Black Pot Stew recipe (It takes all day to cook) and sometimes he prepares it at home beforehand and then cooks it at the camp site or if the weather is going to be bad he cooks it in the oven at home and then heats at the camp site.

ED'S BLACK POT STEW

1 1/2-2 LBS STEW meat or Pot roast
2 bags frozen mixed stew vegetables or fresh carrots, potatoes, green peppers and onions chunked or quartered

2 large onions
2 cans beef broth
1 cup dry red wine
1/4 Cup flour (maybe a little more)
1/2 teaspoon each oregano, thyme, basil
salt and pepper to taste
1 1/2 teaspoon garlic salt
2 Tablespoons Kitchen Bouquet
1 Cup cooking oil

1. Need a big fire for one day so ground is hot (you can also cook in the oven for four hours at 400 degrees)

2. Roll stew meat or roast in salt and pepper and flour. Brown in oil in black pot until evenly browned. Add other ingredients and enough water to cover everything. Stir well

3. Dig a hole 1 1/2 to 2 feet deep under fire ( you have to shovel the coals aside at this point) Place 2 shovels full of hot coals in hole. Place pot in hole making sure the pot cover is on tightly. Cover the pot with 2 inches of dirt or sand. Move fire back over (but don't make a roaring fire) Bake 6 to 8 hours. (Our friend does check a couple of times to see if it's done or if more liquid needs to be added) He lifts the pot out with a metal hook on a long stick (old broom handle) You may want to thicken the gravy with a little flour. Of course you could make this at home and just heat it up Happy Camping!!!
