Congratulations on the upcoming wedding. Your make-ahead desires are so wise. It is so important that you can participate in the events, not be a slave to the kitchen.

As far as catering leftovers, I believe the proper thing to do is make sure there is an advanced agreement with the company that you will get the leftovers. After all, they were paid for. And, be sure this agreement includes whether or not they will provide containers for the leftovers.

Another suggestion is to pre-arrange for nieces, nephews or neighboring teens to help when everyone is at your home. Ask them to pick up empty plates and glasses as the event progresses. Have them keep the dishes on the buffet table refreshed. It is best to make smaller-sized dishes of the same items. This will not only make refrigeration easier, but also allows you to have "fresh" servings on the table as time passes.

Ask your helpers to pay particular attention to folks who may have trouble walking. Your helpers can offer to get them "seconds" or to refill their drinks. They can also make sure the bride and groom have fresh drinks and snacks while they are opening their gifts.

Also, ask one person to make a very clear list of gifts (and who gave them) as the bride and groom open their gifts. This will make it easier for them to send thank you cards.
