Misc. I suppose it would be fine to do that, cook then refrigerate and can the next day. It will always be best to do it fresh, however. If you decide to cook and then can the next day, be sure to bring the mixture to a boil, being careful to not scorch, and then put into your jars and process in the canner.
I see you are also in Washington. The apples are ready! I have a bunch to dehydrate. Have you tried canning some thick sliced apples with red hot cinnamon candies added to the syryp? They are lovely and taste great. One of my favorite things. I also have a recipe for apple pie jam that is good.
