In my search for a way to use leftover ham, I came across a Jambalaya recipe I had clipped from Bon Appetit. It uses andouille sausage and ham and I had both, so...

The taste was delicious, but the recipe just didn't have enough liquid for the amount of rice (3 cups long grain rice, 1 (15 ounce) can tomatoes and 2 cans chicken broth). I halved the recipe and added a little extra chicken broth at the beginning while expressing doubts as to the adequacy of the amount. I used regular long grain rice and don't know if jasmine (usually calls for an amount of liquid closer to the amount of rice, or converted rice would have helped or not. The rice stayed too firm in the middle and I kept adding liquid and finally popped it in the oven to finish cooking, figuring the surround heat would help and it did.

It really wasn't a failure, as the taste was delicious, but it was still too dry after at least a cup extra liquid. This was a fixable problem, but I am always convinced I did something wrong when a recipe doesn't work, especially one from a publication like Bon Appetit.
