Freezing Jalopenos
Misc. I freeze them by chopping and freezing them by the tbsp. in ice cube trays. Once they are frozen, I the cubes in zip locks bags. I have also, blanch them whole, skinned and seeded them and frozen them individually to be stuffed later. I would imagine one could roast, peel, and freeze them. I see them dried in the stores so that would be an option, even though I have never tried it. I also, slice mine and pour hot vinegar over them, seal them in jars and waterbath them.
