Frugal Gourmet's Cabbage Soup

This may not be the one you want, but it's really good.

CABBAGE SOUP

Makes 10 servings

3 tablespoons oil
1/2 pound ground pork (or beef)
2 onions, peeled and sliced
3 cloves garlic, pressed
1 head cabbage, chopped
1/2 cup flour
2 cups red wine or any cheap wine
4 cups beef broth or chicken or veggie
1 quart water
2 tablespoons tomato paste
1 tablespoon Hungarian paprika
1 tablespoon sugar (or more to taste)
Salt and pepper, to taste

Put a large soup pot on to heat and add oil, and brown meat and drain.

Add onions and garlic and cook until clear.

Toss in chopped cabbage, cover and frequently stir until cabbage wilts.

Very thoroughly stir in flour. Add wine, cook and stir until it starts to thicken.

Add the broth, water, tomato paste and paprika. Bring to a simmer and cook for 30 minutes. Add the salt, pepper, and sugar to taste.

If available, cooked sausage may be added before serving, but it is just fine without. Can be garnished with sour cream.
