Am not home yet but glad you got the book!
Saw this post! Our French Canadian Meat Pie (Tortiere) is as your recipe. Each family has its own changes to it. (eg. Instant mashed potato in place of the crumbs) Personally, I use neither. I cook it long with a little flour. It is usually pork or pork/veal and sometimes pork/veal/beef. Some people make it from beef but not a true Tortiere. Anyway, I make my Beef & Kidney Pie with pieces of round steak and pieces of kidney. Very good. Louise doesn't say if she wants pieces of round or ground round.
