Couldn't resist replying to a fellow Canuck!

Gina posted a really good casserole of enchiladas, and the only tomatoes were fresh ones served as garnish, so you could omit them if you chose.

The recipe was really Q&E, and I used leftover chiken pieces, and grated cheese from a bag, so it was just a matter of assembling it, with very little prep.

If you can't find it, let me know and I'll post my adapted version of it.
