This is the recipe I have used for many years and like it very much...Hope it might be what you are looking for. They freeze well.
Bran Muffins
2 cups boiling water
6 cups All Bran Cereal
1 cup Canola oil
4 large eggs, beaten
3 cups dark brown sugar, packed
1 quart buttermilk
5 cups all purpose flour
5 teaspoons baking soda
2 teaspoons salt
24 ounce jar Apple Butter
2 cups chopped nuts
2 cups raisins
Pour boiling water over 2 cups of the all bran.
Add oil, mix and set aside.
Mix together beaten eggs, sugar, buttermilk and remaining all bran in that order.
Sift flour with soda and salt.
Combine both bran mixtures with flour mixture.
Stir in apple butter, nuts and raisins.
Bake in greased muffin tins for 15 to 20 minutes at 400 degrees.
This will make 6 dozen regular size muffins or about twice that amount if using miniature size muffin tins.
