ISO: A good enchilada recipe without tomatoes

Misc.
I once had chicken enchiladas that were made casarole-style, they had a white sauce, the cream of chicken soup-types but they had wonderful Ortega Chillis and lots of jack cheese in the. The enchiladas were rolled and then the sauce poured over top - then the cheese melted on top at serving time.

Any ideas?
Thanks ladies - I'm new to this and enjoy all your recipes and comments. I love to cook and have lots to share - just have to get motivated.
