Recipe(tried): Chicken Enchiladas

To Pat...this doesn't meet all your criteria but it is easy and delicious.

Chicken Enchiladas

3 Cups Cooked Chicken, Bite size pieces
3/4 Cup Jack Cheese, Grated
3/4 Cup Jack Cheese With Peppers, Grated
1/2 Cup Sour Cream
1/3 Cup Fresh Cilantro, chopped
8 Flour Tortillas

Sauce
8 Oz. Sour Cream
1 Bottle Green Taco Sauce

Mix chicken, cheeses 1/2 cup sour cream and cilantro. Evenly divide on each tortillas and wrap. Place in 13x9-inch casserole dish that has been lightly sprayed with Pam. Lightly spray the enchiladas with Pam also.

Place in 375 oven until golden in color. Remove from oven. Mix together the sauce ingredients and pour over enchiladas. Put back in oven just to heat the sauce. Remove from oven and serve on top or as condiments to be added, all or some of the following: sliced olives, green onions, cilantro, avocado, tomatoes.
