Hi Manyhats,
I'm glad you liked the chicken. I like to post recipes that others enjoy too. The mushrooms sound like a great addition. I think I'll try adding them next time also. I like your idea for the leftovers, I think it will be another great meal. I made my leftovers into a California Pie. I put the leftover chicken (chopped up) & vegetables into a pie crust & added some other vegetables - cauliflower, broccoli, carrots, onions, tomatoes,& some mushrooms. I warmed it up & then melted cheese on top. This made a very good dish also & I still have some of this left over for lunch one day.
