Recipe: Herbed Pork Roast

HERBED PORK ROAST

Servings: 8

4 lb boneless top loin roast
1 clove garlic, cut into halves
1 tsp dried sage
1/2 tsp dried marjoram
1/2 tsp dried thyme leaves
salt to taste
pepper to taste

Preheat oven to 325 degrees F.

Rub roast with cut sides of garlic.

Combine remaining ingredients. Sprinkle over roast. Place roast, fat side up, on rack in shallow roasting pan. Insert meat thermometer so that tip is in center of thickest part of pork.

Roast uncovered at 325 degrees F until temperature reaches 170 F, about 2 to 2 1/2 hours. Allow to sit 15-20 minutes before carving.
