I like to make Apple Butter with my bumper crop also...
Misc.We love home-made Apple Butter on toast, biscuits,.... & it would use a lot of your apples. Let me know if you want the recipe & I'll post it. It does take quite a bit of time though. Also, this week I've been freezing apples. I quartered, then cored, then peeled, then dropped into a pan of water with lemon juice added (1 TBS). After I had about 6 or so done this way, I removed the quarters & sliced them & put into quart bags (will hold about 5 cups sliced)which is good amt for an average pie. Also, after I got so tired (& 14 qrts done) I decided to leave some of them quartered because I found some recipes call for diced or shredded in cakes & muffins & salads too and you can just chop or shred the quarters easily. I made Apple Streusel muffins this week but they only use 1 apple. Also, I plan to make a few cakes & freeze the cakes.
