Here's my apple butter recipe:
24 small apples, peeled, cored, and quartered
2 cups of apple cider
2 tsp of cinnamon
1 tsp of allspice
1/2 tsp of cloves
1/4 tsp of nutmeg
2 cups of brown sugar
Put the apples and cider into a pot and bring liquid to a boil. After the liquid is boiling, stir, reduce heat, and cover. Cook until apples are soft and mushy.
Using a potato masher or a fork , mash up the apples. Pour this into a baking pan and add the sugar and spices. Mix this until all sugar and spices are distributed evenly within the mashed up apples.
Bake this for approximately 1 1/2 to 2 hours at 350F. Stir once in a while. Remove from oven and let cool. Using your blender, blend this mixture to a puree.
This can be canned or frozen for later use.
Other information: I make this in a sugar free form too. I use the powered sugar free apple cider and just add the necessary water, and I use a brown sugar substitute or I leave the sugar out completely. The recipe is very good this way too, if you happen to be diabetic or counting calories.
