I'm going to have to try Barb's method (it's a new one to me!), but I have had great success this way - wash the head of lettuce (this is for romaine, boston, green/red leaf lettuce - not iceberg), including between the leaves. Then, dry very, very well with paper towels. Wrap the entire head with dry paper towels and place in a large ziploc bag. The paper towels absorb the moisture that would otherwise turn the lettuce to slime when stored in plastic.
