Recipe: Steak Caribbean (using London broil)

STEAK CARIBBEAN

1/3 cup fresh orange juice
1/4 cup dry red wine
2 tablespoons vegetable oil
1 tablespoon vinegar
2 cloves garlic, crushed
3 pounds London broil
1 1/2 teaspoons salt
1/2 teaspoon Tabasco sauce
1/2 teaspoon turmeric
1/2 teaspoon ground ginger
1/2 teaspoon dry mustard

Combine orange juice, wine, oil, vinegar, garlic, salt, Tabasco, turmeric, ginger and mustard; mix well.

Place steak in a shallow, flat dish; cover with marinade and marinate at room temperature 2 hours, turning occasionally.

Remove steak from marinade; broil to desired degree of doneness, basting with marinade.

In a small saucepan, bring remaining marinade to a boil and simmer a few minutes. Serve with meat. If desired, serve with additional Tabasco sauce.
