Recipe: Jeff's Favorite Pizza Sauce
Pizza/FocacciaJEFF'S FAVORITE PIZZA SAUCE
"This sauce has a quality similar to restaurant flavor, but being freshly made seems to take on a better flavor."
1 (28 oz) can Progresso Plum Tomatoes with Basil, drained
1 (12 oz) can tomato paste
2 tsp olive oil
1 heaping tsp dried oregano
3/4 tsp garlic powder (not garlic salt)
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp onion powder (not onion salt)
1/8 cup Parmesan cheese*
1 tsp light brown sugar
Puree the drained tomatoes well. Place the puree mixture in heavy saucepan. Add remaining ingredients except for the grated cheese and brown sugar. Simmer 1/2 hour, or longer if necessary.
Add cheese and brown sugar last 10 minutes of cooking.
Sauce can be frozen.
*It is important to use Italian Plum Tomatoes, not regular canned tomatoes. The flavor is distinctively different. If you cannot find Progresso Plum Tomatoes with basil, add 1/2 tsp. basil to the tomatoes.
*The canned grated Parmesan is good in this recipe, as well as fresh.
