Lori D...Here's my results for the Cinnamon and the Banana coconut Muffins I made this morning....

Actually we tried both the Cinnamon Muffins and the Banana Coconut ones too...
As for the cinnamon muffin muffin, when I tasted the cinnamon muffin batter, I found it hadn't much flavour either so I blended a tsp. of cinnamon with a tbsp. of brown sugar and added it right to the batter....it gave it more flavour.Then instead of just placing the streudal topping to the top, I layered it alternatively with the batter as I filled my muffin cups before baking. Anyway, they were delicious right out of the oven....the cinnamon sugar throughout the centre was mouth watering. The texture was fine too.. but I was first a little apprehensive about using 4 tsp.!! baking powder but actually there wasn't an off taste at all... probably because of all that cinnamon sugar!!! .We're going to keep that recipe!! Next time we've decided to finely toast and chop up walnuts to the cinnamon sugar mixture to give that crunchy texture. I really enjoyed them.....but......

As for the Banana Coconut muffin....well..that's another story.....I should have checked with you to get your opinion on whether to use unsweetened coconut or not....l used the sweetened variety and didn't cut back on the sugar at all! Plus I mashed the bananas and didn't cut back on the liquid ingredient. And the coconut based topping fell off the tops in the oven. I should have pressed the topping into the muffin before it went into the oven....the result....well, I got a very very sweet, and a little too wet muffin. Also I only got 10 muffins out of the recipe. But what's one recipe out of all the others. I may give it a second try though,, this time with dried banana chips and follow the recipe to a tee. Also I was thinking the combination of bananas and coconut with added pineapple would be nice in a denser type muffin with whole wheat, etc. I'll have to look for that combination on one of the sites you posted for us.

You should try the Award winning raspberry muffin you posted. I've now made it twice and the flavour and texture is wonderful. The use of lemon yoghurt gave it a nice flavour and texture. It was great with blueberries instead of the raspberries too. Also the fresh cranberry muffins are wonderful too. They have the orange zest in them and the flavour is great. I'll post a "results" for you by Wed. for all the muffin recipes you've posted. I've made some other variations in some of them too.. We're going to try the remaining three recipes you posted over the next few days.....Now....what ever am I going to do with those banana coconut muffins.....take care....colette...P.S. That chili sounds good too...Today would be a great day for it here in Nfld. with the rain and wind we have outside..... Too bad you can't cut and paste a bowl to me...ha...
