I made the Cinnamon Muffins this morning. . .
Misc.Got back from my daughter's speed skating practice and decided the cinnamon muffins sounded good. I switched the butter out and used butter flavored Crisco instead and added cinnamon to the batter along with the nutmeg. Well I made them in little loaf pans and they really rose quite a bit. Took them out to cool and they were moist but quite crumbly and I thought they were a bit on the dry side. How did your's come out? If I make them again I think I would cut out some of the baking powder and maybe add a little vegetable oil. I really like heavy moist muffins so this didn't quite cut it for me. How did yours come out and what did you think?
Sounds like our daughters are in the same age range - mine's 12. Well off to tend my chili, trying out Verla's Secret Ingredient Chili off the tried and true board so I'm letting it simmer all day. After I clean up it's off to the gym for a good hard workout, try to get some of these muffins off my hips!!! LOL
