Colette's Banana Orange Oatmeal Muffins:
Ingredients:
1/2 cup rolled oats
1 1/3 cups all purpose flour
1/3 cup of bran cereal (I've often used bran buds as well)
1/2 cup brown sugar, lightly packed
2 tsp. baking powder
1 tsp. salt
1/4 tsp. baking soda
1 cup mashed bananas
zest of 1 orange (or 1 orange grated)
1 egg
1/3 cup soured milk (I just use regular 1% or skim milk with 1 tsp. vinegar)
1/3 cup oil
1/2 cup chopped nuts (optional..I've also used raisins instead)
Directions:
1. Place all dry ingredients together in a medium bowl. Combine well.
2. Milk all wet ingredients, mashed bananas and orange rind together in a large bowl. Blend until smooth.
3. Pour dry ingredients into the bowl of wet ingredients. At this point, add nuts. Combine just until dry ingredients have been moistened.
3.Place batter into 12 lined muffin cups.
4. Sprinkle dry rolled oats over tops of muffins.
5. Bake at 375 for approximately 15-18 minutes.
The muffin monsters will come out for sure for these great treats!!
