Recipe: No Problem Apple-Raisin Bread (using egg substitute, raisins and walnuts)

2 medium Golden Delicious unpared apples (3/4 pound), chopped (3 cups)
3 cups unbleached all-purpose flour
1 1/2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1 cup liquid egg substitute
1/2 cup canola oil
1/2 cup light corn syrup
1 tablespoon PLUS 1 teaspoon vanilla extract
2/3 up seedless raisins
1/4 cup finely chopped walnuts, toasted
Preheat oven to 325 degrees F. Spray 2 (9x5-inch) loaf pans with a non-stick vegetable coating; set aside.
In a large bowl, beat all ingrediets with an electric mixer for 1 minute at low speed Be sure to scrape the sides of the bowl. Increase Speed to medium and continue beating for 1 minute more. Pour batter into prepared pans.
Bake 60 to 65 minutes, or until a wooden pick inserted in center comes out clean, Cool 10 minutes in pans then remove from pans and cool completely before slicing.
Makes 2 loaves 16 slices each
