How about posting your potato casserole recipe? It sounds GREAT!!!!!!

I don't know how you made your chicken and dumplings, but we always make them by stewing a chicken, skin, neck, etc. and making a broth. After we put the chicken in the pot, we add generous amounts of poultry seasoning, 2 cubes of chicken bouillion, garlic, onion, salt, and pepper. We simmer this broth until the chicken is done and then remove the chicken. To the broth we add 1 can of cream of chicken soup and let this mixture simmer. Then we add the dumplings--made of flour, salt, water, etc. These dumplings are similar to pie crust, but fluffier. After we add the dumplings, we cook this mixture until the dumplings are done. We then add the chicken, which we have removed from the bones, stir, and serve this in bowls. In the south one can buy frozen dumplings in the frozen foods section. My favorite brand is Open Kettle Dumplings. These dumplings are made in a small factory in Bagdad, Florida. Bagdad is about 80 miles away from my hometown and about 15 miles away from Pensacola, FL.
