That pretty much how I made mine except I cooked the chicken in the crock pot. I would love it though if you would share with me your "mama's" recipe. I really just kind of winged it. For the potatoe casserole - which is WAY too easy (rather embarassing really) you prepare and quarter about 2 1/2 - 3 pounds potatoes and boil. When tender drain and beat till smooth. Add 1/2 cup sour cream and 3 oz. of cream cheese (softened). Add garlic powder, ( I think the orignial recipe called for garlic salt, but I dont care for all the salt anymore) salt & pepper to taste. Beat again till fluffy, spoon into 2 qt casserole dish and dot with butter. Cook @400 for 25 mins and uncover and cook till top is just slightly browned, about another 10 mins. I always find something else to add to this dish. My favorite, however not when on a diet, is sauted onion, bacon and then sprinkle with cheese and green onion. If you make ahead, you just increase the cooking time. I love to make this ahead at thanksgiving, it frees up time to make some of the more elaborate foods and relieves the pressure of trying to get mashed potatoes for a crowd to the table hot.
