Question for V.
Misc.After you've cooked the roast at 375 for 1 hour, do you turn the oven off until the last 30-40 min. before serving?
I'm a bit confused, because I usually let a roast rest after removing it from the oven for about 20-30 min., in order to allow it to reabsorb the juices. Do you ordinarily serve your roast directly from the oven?
