Misc.Must bring roast to room temperature and let it sit at room temperature at least 1 hour.
Rub generously with salt (I use coarse salt) and pepper, if desired. I rub it all over and GENEROUSLY
Cook with fat sid up 1 hour at 375 degrees.
DO NOT DO NOT DO NOT DO NOT open oven door!!!!!!!!!!!!!!!!!!!!!
Let sit in UNOPENED oven door until 30-40 minutes prior to serving.
Return oven to 375 degrees and cook 30-40 minutes.
Depending on size of roast, from the time to turning the temperature knob back to 375 to the time of removal will be 30-40 minutes for a small roast (I've cooked a 3 pound roast this way).
If large, turn the knob up to 375, wait until cook light turns off (this means the oven has reached the correct temperature), and cook for 30-40 minutes.
