Prime Rib Roasted in Rock Salt

Prime Rib Roasted in Rock Salt

Serving Size : 6 Preparation Time :10:30

1 4 pound prime rib
2 cups food grade rock salt
1 Tablespoon coarse ground pepper
1 Tablespoon Lowry's Season Salt

Cover the bottom of a roasting pan with rock
salt. Place prime rib, bone-side down, on the
salt. Season meat with pepper and seasoning
salt and cover completely with more rock
salt.

Roast in a 210 degree oven for 9 to 10 hours,
until internal temperature reaches 125
degrees. Remove from oven and let rest for
30 minutes to set the juices and make roast
easier to carve.

When ready to serve, remove all salt from rib
and carve.


This is JA talking now, and I can't believe 2
cups of salt could cover a 4 pound roast. I
would have more salt on hand. I haven't
tried this recipe myself but have heard many
people rave about it. There was even a law
suit over ownership of the recipe!

5 - Boxes Rock Salt

Preheat oven to 500 .
Place contents of one box of rock salt in
bottom of covered roasting pan. Place
roast in pan and pack remaining rock salt
around roast. Sprinkle with a little water.
Roast in oven for one hour. Chip away salt
from roast (this will make a real mess!)



Carve and serve. It is delicious!
