Misc.Yes. You cook the roast for 1 hour and turn off the oven, keeping the roast inside the oven. Say you want to eat at 5:00. You start the roast at 2:00, cook it until 3:00. LEAVE THE OVEN DOOR CLOSED. Then, depending upon the size (larger roasts will take the 40 minutes, smaller ones like 4 pounds will go only 25 minutes total) turn the oven back to 375* somewhere around 4:30. Then serve it straight from the oven. You will not have to let it sit as it already released its juices during the rest between heating. The roast is hot and juicy when served.
