re: Baking in a Convection Oven

Is it possible to turn off the convection fan? Some have a switch or you can choose plain "Bake" instead of "convection bake". Every oven is different, but convection will cause anything that needs to rise to set before it finishes it's rise due to the drying effect of the air movement. It also transfers the heat faster to what you are baking, which may cause it to bake unevenly. It evens the heat out more in the oven, so what you are baking will bake from all directions instead of from the bottom like in a convectional oven.

It is great for things you want to be crispy like roasting chickens, baking most cookies, pies and some pastries. It takes a little bit to get used to but well worth the effort IMHO.
