Re: Chicken Skin

Iknow in these health conscious days we all aren't supposed to eat the skin but who can resist it eh?

This is a favourite way of doing it in our house....if you're going to roast a chicken, mix together 2 tsp ground cinnamon and 1 tsp salt and just run it into the skin of the chicken. Drizzle a teeny teeny bit of olive oil and remember to baste while it cooks. It's lovely...I promise.
