WELSH COOKIES
10 cups flour
2 cups currants
2 tsp nutmeg
2 tsp baking powder
1 tsp baking soda
3 eggs, beaten
2 tbsp vanilla
1 cup plus of milk
1 lb butter or margarine, softened
2 1/2 cups sugar
Mix together flour, currants, nutmeg, baking powder, and baking soda; set aside.
Place eggs and vanilla in a 2 cup measure and add milk to make 2 cups total; set aside.
Cream together butter and sugar with a mixer.
Pour egg mixture grandually into butter mixture and mix until cottage cheese like consistancy.
Add flour mixture and hand mix until dough like and a heavy batter forms.
Cover and refrigerate overnight.
TO BAKE:
Roll out on a floured surface dough and cut.
Grill on dry griddle at 350 degrees F about 2 minutes on each side.
