Hi Rochelle,

I haven't made that recipe, but there are different kinds of instant coffee and this recipe is probably using the finer kind that isn't the little crystals. In any case, I agree with you, I would dissolve the instant coffee in a tiny bit of hot water before using it in the recipe.
