I couldn't find any kind of recipe online but did find this brief description and method (not from Magic Pan.)

Crepes beignet - separate refrigerated crepes and cup up into one inch strips. Fry till crisp and dust with cinnamon sugar than powdered sugar. Serve with warmed brandy and raspberry or apricot preserves or with melted chocolate and brandy.
