I'm a fellow NYC resident too! What you describe sounds like Oi Sobagi Kimchi -- or cucumber kimchi, unless they're using another "bright, green, and crunchy" vegetable. Many Korean households make their own kimchi from scratch, so there are thousands and thousands of different recipes around, using different flavorings, ingredients, methods -- take a look at any Korean cookbook, and chances are you'll find at least 2-3 different kimchi recipes. (I'm sure the deli has its own recipe.)

You can try my Quick & Easy Kimchi-style Vegetables, posted a couple of weeks ago, if you want something close to the real kimchi, or you can do it from scratch (most recipes I've looked at takes about 24-48 hours vs. my 30 minutes). If you're willing to go for the real thing, check the numerous kimchi recipes posted at www.soar.berkeley/edu to see which one comes close to what you're looking for.
