Recipe: Hushpuppies for a Crowd

Breads - Assorted
HUSHPUPPIES FOR A CROWD

2 cups white cornmeal
2 cups all-purpose flour
3 tablespoons baking powder
2 teaspoons salt
1 teaspoon black pepper
1 medium onion, finely chopped
3 cups milk (scant)
Vegetable oil for frying

In a large bowl sift the cornmeal, flour, baking powder, salt and pepper together. Add the onion. Add the milk.

Heat 1 1/2 inches of oil in a large skillet to 375 degrees F.

Drop the batter by half spoonfuls into the oil and fry until lightly browned. Drain on paper towels.

Serving suggestion:
Serve with fried catfish, coleslaw, and baked beans."

Makes 72 hushpuppies
